[사건의내막 / 김대유 (칼럼니스트)] = 김치는 고대 이래로 한국인의 축제식품으로 자리잡았다. 김치는 세계 어디에서도 그 유래를 찾아 볼 수 없는 한국인만의 발효식품이다. 김치는 배추를 재료로 쓰기 이전부터 무, 부추, 미나리, 죽순 등 토종재료를 사용하여 장(醬)이나 소금에 절여 만들어 왔고, 지금도 전주에 가면 이러한 고대의 김치 원형(元型)을 발견할 수 있는 패스티발이 열린다. 김치는 고대부터 의례음식으로서 기능적 상징성을 지니고 있어서 조선에 이르기까지 국례와 가례의 필수적인 제례(祭禮) 식품으로 등장하였고, 난리통에는 백성들이 땅에 묻은 김장통을 꺼내서 구황식품으로 대체하기도 하였다. 

 

흔히 국제적으로 김치를 논할 때 중국의 옌차이(腌菜)나 파오차이(泡菜), 일본의 쓰케모노(漬物), 유럽의 피클(pickle)이나 사우어크라우트(sauerkraut)와 나란히 비견하여 소개하는데 이는 근본적인 오류가 있다. 발효식품인 김치와 달리 이들 식품은 모두 절임에 해당하는 일종의 짱아치 종류이기 때문이다. 다만 김치가 식품영양학의 범주에서 이탈리아의 파스타나 중국의 국수, 일본의 스시처럼 학문적인 체계가 축적되지 못한 한계 때문에 혼동을 야기하고 가끔 종주국 시비가 벌어지는 상황은 안타까운 일이다. 

 

비닐하우스 농사가 발달한 지금과 달리 김치는 서리가 내리는 늦가을이나 눈발이 날리는 초겨울에만 담았다. 김치를 담그는 날에는 온 가족이 함께 달려들어 힘을 보탰다. 김장을 고춧가루와 양념에 버무리고 젓갈을 섞어 독에 담근 후 땅에 묻어둔 후 기온이 영하로 떨어지는 한겨울이면 잘 발효되어 익은 김장김치를 꺼내 먹었다. 가난한 집이나 부잣집이나 할 것 없이 김치는 겨우 내내 봄이 올 때까지 주요식품으로 밥상에 오른다. 김치는 나누고 베푸는 식품이기도 하다. 가난하여 김장김치가 떨어진 집에 마을 사람들이 순서를 정해서 한포기씩 전달하였고, 초상을 치루는 가난한 집에도 십시일반으로 모아진 김장김치가 보시(報施)되었다. 김치는 한국인의 혼이고 한이었으며 삶 자체였다. 김치가 식품 중에 드물게 유네스코의 세계문화유산으로 자리잡은 것은 이와 같은 한국인의 독특한 ‘김치문화’ 때문이다. 

 

김치 종주국 논란의 원조는 애초에 일본이었다. 일본은 그저 단순한 한국의 토종음식으로만 인식되던 김치를 일본식품의 ‘기무치’라는 이름으로 상품화하여 국제시장에 내놓았고, 한국을 제치고 기무치를 국제식품규격위원회(Codex)에 등록하려 하였다. 이러한 일본의 비열한 상혼(商魂)에 충격을 받은 한국은 1996년 뒤늦게 발분하여 코덱스에 기무치가 아닌 김치(Kimchi)를 공식적인 명칭으로 통일하도록 조치하였고, 2001년에 비로소 제네바에서 열린 제24차 코덱스 총회에서 한국의 식품으로 인정받았으며, 2013년 유네스코는 김치문화를 인류무형문화재로 지적하였다. 김치 자체가 유네스코 유산으로 지정받은 것은 아니지만 김치를 둘러 싼 한국인의 김치문화를 인류의 문화유산으로 인정한 것이다. 

 

중국 역시 김치를 놓고 신경전을 벌였다. 쓰촨성의 파오차이가 김치의 원조라고 주장하기 시작했고, 심지어 당나라 장군 설인귀가 자신의 고향식품인 절임채소를 한반도에 들여 온 것이 김치의 시초였다고 규정하였다. 최근에는 한국의 김치를 ‘한국 파오차이’라고 명명하면서 김치라는 말 자체를 말살하는 풍조가 퍼지기 시작했다. 당연히 이러한 조치는 한중 양국의 선량한 국민정서를 해치는 장애물로 등장하였고, SNS를 중심으로 언론에도 양국의 경제문화적 갈등으로 대두되었다. 이미 일본이 한차례 훼절했던 김치문화를 비슷한 방법으로 재탕하는 것은 대국의 체면이 아니다. 황화문명을 잉태하고 동아시아에 빛나는 한자문화를 일으킨 중국이 G2국가로서 일대일로를 꿈꾼다면 가장 먼저 해야 할 일은 상대국의 문화를 존중하는 것이다. 김치는 근본적으로 쓰케모노나 파오차이가 아닌 유네스코의 문화유산이다. 김치는 단순한 음식이 아닌 한국인의 ‘김치문화’이다. 

 

중국이 김치를 김치라고 부를 때 비로소 중국은 국제사회에서 한국의 문화와 유네스코 정신을 존중하는 진정한 문화대국이라고 인정받을 수 있을 것이다. 김치와 김치문화를 둘러 싼 한중 양국의 정서가 하루빨리 제자리로 돌아오기를 고대한다. 이 문제를 원만하게 풀면서 두 나라의 선린우호가 더욱 깊어지기를 바라는 마음에서다.

[Column] Korea's Kimchi Culture as a Cultural Heritage of Mankind

 

It is this unique kimchi culture of Koreans that has been established as a world heritage site.

 

[The story of the case / Kim Dae-yu (Columnist)] = Kimchi has been established as a Korean festival food since ancient times. Kimchi is a fermented food unique to Koreans that cannot be found anywhere in the world. Kimchi has been made using native ingredients such as radish, leek, parsley, and bamboo shoots before using cabbage as an ingredient, and you can still find this ancient kimchi prototype if you visit Jeonju today. There is a festival held. Kimchi has a functional symbolism as a ritual food since ancient times, so it appeared as an essential ritual food for Gukrye and Garye until Joseon, and the people took out the kimjang that was buried in the ground and replaced it with Guhwang food.

 

When discussing kimchi internationally, it is often compared with Chinese Yan Chai or Pao Chai, Japanese Tsukemono, and European pickle or sauerkraut. There is an error. This is because unlike kimchi, which is a fermented food, these foods are all types of jangarch that are pickled. However, it is unfortunate that kimchi, in the category of food and nutrition, causes confusion due to the limitations in which an academic system has not been accumulated, such as Italian pasta, Chinese noodles, and Japanese sushi.

 

Unlike now when green house farming was developed, kimchi was only served in late autumn in frosty or early winter in snowy days. On the day of making kimchi, the whole family rushed to support them. Kimjang was mixed with red pepper powder and seasoning, mixed with salted salt, soaked in poison, buried in the ground, and fermented well in the middle of the winter when the temperature dropped below freezing, and then the ripe kimchi kimchi was eaten. Whether in poor or rich, kimchi is served at the table as a staple food until spring comes. Kimchi is also a food shared and served. The villagers decided the order and delivered them one by one to the house where the kimchi kimchi had fallen because of the poor, and the kimchi kimchi collected in general was seen in the poor house where the portrait was held. Kimchi was the soul and Korean soul of Koreans, and life itself. The reason that kimchi has become a rare UNESCO World Heritage Site among food products is because of the unique “Kimchi Culture” of Koreans.

 

In the first place, Japan was the source of the controversy over the country where kimchi succeeded. Japan commercialized kimchi, which was simply recognized as a native Korean food, under the name “Kimuchi” of Japanese food, and put it on the international market, and tried to register Kimchi with the International Food Standards Committee (Codex), beating Korea. Shocked by Japan's despicable marriage, South Korea issued a belated release in 1996 and took measures to unify Kimchi, not Kimchi, in the Codex under the official name.In 2001, at the 24th General Assembly of the Codex held in Geneva. It was recognized as a Korean food, and in 2013 UNESCO pointed out kimchi culture as an intangible cultural property of humanity. Although kimchi itself was not designated as a UNESCO heritage, it recognized the Korean kimchi culture surrounding kimchi as a cultural heritage of mankind.

 

China also had a nervous war over kimchi. Sichuan Province's Pao Chai began claiming the origin of kimchi, and even stipulated that it was the beginning of Kimchi that the Tang Dynasty General Seol Ingwi brought his hometown food, pickled vegetables, to the Korean Peninsula. Recently, as Korean kimchi was named “Korean Pao Chai,” the trend of annihilating the word kimchi itself began to spread. Naturally, these measures emerged as an obstacle to the good public sentiment of both Korea and China, and emerged as an economic and cultural conflict between the two countries in the media centering on SNS. It is not the face of a big country to rethink the kimchi culture that Japan has already destroyed once in a similar way. If China, which conceived the Hwanghwa civilization and created a shining Chinese character culture in East Asia, dreams of becoming a G2 country, the first thing to do is to respect the culture of the other country. Kimchi is not essentially a Tsukemono or Pao Chai, but a UNESCO cultural heritage. Kimchi is not just food, it is a Korean “kimchi culture”.

 

When China calls kimchi as kimchi, China can be recognized as a true cultural power that respects Korean culture and UNESCO spirit in the international community. We look forward to the return of the sentiments of both Korea and China surrounding kimchi and kimchi culture as soon as possible. It is in the hope that the two countries' goodwill friendship will deepen while solving this problem smoothly.
